Canapé with Lightly Salted Salmon and Cheese

Preparation

Lightly Salted Salmon:

1. Mix salt and sugar.
2. Cover the salmon fillet with this mixture on all sides.
3. Cover the container with salmon with cling film to prevent drying out and refrigerate for 3–4 hours for salting.
4. After salting, pat the salmon dry from excess salt, rinse and dry if necessary.

Canapé:

1. Combine Philadelphia cheese and cream in a 1:1 ratio and beat with a mixer until smooth creamy consistency.
2. Slice salmon thinly.
3. Place a piece of salmon rolled into a spiral on each TM "Aviant" crouton.
4. Pipe the creamy cheese mixture into the center of the canapé using a pastry bag.
5. Garnish canapés with fresh herbs, roe, or other toppings to taste.
